City Council Approves Plans for Restaurant Near Costco

Baxter residents can look forward to a new dining option as Panera Bread has received approval to establish a restaurant near the local Costco.

During the regular session on November 18, the Baxter City Council granted both preliminary and final plat approvals, along with a conditional use permit for a drive-thru at the site located off Elder Drive.

Construction is anticipated to commence promptly, with developers aiming for an opening by next fall, or possibly sooner, depending on weather conditions.

The 3,128-square-foot establishment will feature indoor seating, an outdoor patio, and a drive-thru.

Access to the restaurant will be available via Elder Drive and Forthun Road, utilizing the private drive along the perimeter of the Costco parking lot.

Operating hours are set from 6 a.m. to 9 p.m. Monday through Saturday, and 7 a.m. to 8 p.m. on Sundays.

The restaurant plans to employ 10-15 staff members, offering a mix of full-time and part-time positions.

In 2017, there were plans for a Panera Bread location at the intersection of Highways 371 and 210, but the project did not materialize.

This new development fulfills a long-standing desire among local diners for a Panera Bread in the community.

Currently, there are 32 Panera Bread locations in Minnesota, primarily in the Twin Cities metro area, with additional sites in St. Cloud and Duluth.

The addition of a Baxter location marks a significant expansion into smaller communities.

Founded in 1987 as St. Louis Bread Co., Panera Bread has grown into a national chain known for its freshly baked goods, soups, salads, and sandwiches.

The menu also includes breakfast items, family value meals, and a variety of vegetarian options.

Services such as mobile ordering, catering, curbside pick-up, and delivery are available to enhance customer convenience.

As part of Panera Brands, which includes Caribou Coffee and Einstein Bros. Bagels, Panera Bread continues to expand its presence, bringing its offerings to new communities like Baxter.
